This recipe is perfect for any holiday event you have. It will impress everybody, yet little will they know that it took about 25 minutes of prep time to make!! Lazy people rejoice! This recipe is dairy free/gluten free and can be made vegan. But enough talk. More cooking.
Cauliflower Pizza

Serves 2 (or just you!)
Ingredients
1 large head of cauliflower
1 egg (see notes for vegan alternative)
1/2 cup cheese of choice (Asiago works great, see notes for vegan alternative)
1/2 tsp dried oregano
1/4 tsp salt
1/4 tsp garlic powder
Scant 1/4 tsp black pepper (trust me)
Tomato sauce and any other toppings!
Directions
Place your roughly chopped cauliflower into your cuisinart, and let it run until the cauliflower has the texture of very fine grains of rice. Remove from cuisinart into a microwave safe bowl, cover with a damp paper towel, and let it cook for 5 minutes. Remove from the microwave, and let it cool for 10 minutes (don't rush this step!). After 10 minutes, grab a paper towel (or better yet a cheesecloth) and squeeze the cauliflower until most of the water has been drained out. Set aside. In a large mixing bowl, combine your egg, cheese, and spices. Mix together, and then add your cauliflower. Once it is well combined, place on a pizza pan or baking pan lined with parchment paper. Form the dough into a flat round circle, and pop into the oven at 400*F for 20 minutes. Take out, add on tomato sauce, more cheese, and whatever your heart desires. Place back into oven, this time set on broil, and take it out as soon as cheese is melted (Less than 2 minutes). You can share it with your family, friends, or you can just keep it to yourself. Mmm, pizza.
Notes
For a vegan option, you can replace the egg with with any egg replacer, such as 1 1/2 tsp of Ener-G. Add more if you think the dough looks a little dry.
For the cheese, you can use any vegan cheese brand such as Daiya, Go Veggie, etc. Just make sure it is shredded!
Go crazy with the toppings! You can use basil leaves, pepperoni, pineapple, bell peppers, carmelized onions..
